This is the Pasta version of my Vegan Mango Peanut Salad using the same peanut dressing that's bursting in flavors from gingery, sweet, spicy, tangy, savoury to herby... in short Deliciousss & Appetising!

To create the diverse range of flavor for the peanut dressing, I add coriander, garlic, sesame, ginger, cayenne, Bragg's Aminos, apple cider vinegar to the special homemade peanut base.

    A little dry but the flavour is nice. Somehow the cucumber and mango do not enhance the noodles.. but overall is addictive :) Thank you Sinde.

      Thank you Josephine for your feedback! Your feedback is valuable to me as i do need feedback so that i can improve on my meals. Blended peanut sauce is always very tricky as it tends to thicken over time. Only way is to add some starch to it ie corn starch but I want to avoid using starch if i can. Adding more olive oil won't do either. Another way I can do to is to add more water to the sauce to counter the thickening process over time. I am also thinking of adding chia seeds to the dressing as the chia seeds will give the sauce a consistency of gel like texture. Will try this out as chia seeds is super healthy. I put mango in this pasta as the sweetness of mango compliment well with the gingery taste of the peanut sauce & spiciness of the capsicum. Coat the mango with the sauce & eat together with the capsicum & you will know what I mean. As this pasta is very rich & contrasting in taste (hence why its addictive), I choose cucumber so that it has 1 ingredient that is mild or nuetral tasting : )
