Vegan Pumpkin Cashew Laksa with BrownRice Meehoon & Organic Tofu

Laksa, an irresistible noodle in spicy sour broth from the Peranakan culture.
Unless homecooked, most restaurant & hawker-style laksa can contain lots of sugar, salt, flavorings, MSG, thickeners, fillers & the end result well... delicious yes but not a very nutritious meal.
The beauty of laksa, is the depth & breadth of the flavor & the nutritional benefits of the many spices. Spices contains potent antioxidants, anti-inflammatory and cancer-fighting nutrients. The spices & condiments in this vegan laksa bowl is chilli (2 types at least), coriander seeds, kaffir lime leaves, lemongrass, coriander leaves, cayenne, onions, garlic, galangal, turmeric, himalayan salt & sesame oil.
Instead of coconut milk, pumpkin & cashew is blended to thicken the broth to LOWER the CALORIES of this meal [again I have nothing against coconut milk as long as it's not hydrogenated but I find Malaysians generally don't like coconut milk when it comes to eating healthy... and I have given up on explaining MCTs : ( ]
Served with BrownRice noodles. No transfats, MSG, thickener used.
