BIBIMBAP means mixed-rice in Korean.

Traditionally it is served in a bowl of warm white rice topped with sautéed vegetables & a korean chili pepper paste which is known as gochujang. This meal is eaten by mixing everything together thoroughly.
For my healthy version of BIBIMBAP, white rice is replaced by Quinoa, Millet & Buckwheat. I make my own gochujang blend using korean red chilli paste, garlic, applecider vinegar, Bragg's amino, sesame & scallions.

Toppings may vary according to seasonal vege but basically it is carrots, pea or bean sprouts, mushrooms, mustard greens, gingko nuts, chinese yam & lotus root & tofu or beancurd.

This meal also comes with a fried free-range egg & a side serving of wholesome vegetarian soup : )

      Melinda, many thanks for your comment! So glad you find it delicious & healthy :) These are the 2 exact goals I strive to achieve with every of my meals. Filling too.. to avoid HANGRY ;) On the soup, it's meant to reduce the dryness, if any, when the bibimbap sauce is mixed to the mixed quinoa together with at least 7 vegetarian ingredients. Guess everybody enjoy it more by drinking the soup that I hav been gettin request to increase the soup. Wil do next time!
